Indian Egg Plant Stir Fry






For roasting:

1 Egg Plant (400 g)

3 Cloves of garlic

1 tee spoon (tsp) oil

For Masala:

2 table spoon (tbsp) oil (~30 m)

1 tee spoon (tsp) cumin (~3 g)

1 inch ginger (finely chopped)

1 onion (finely chopped)

1 tomato (finely chopped)

½ tee spoon (tsp) red chilli powder (~1.8 g)

1 tee spoon (tsp) coriander powder (~3 g)

½ tee spoon (tsp) turmeric powder (~1.5 g)

½ tee spoon (tsp) garam masala powder (~2 g)

1 tee spoon (tsp) salt (~6 g)

Indian Egg Plant Stir Fry MADE WITH LOVE BY ROJA

Baingan Bharta is a Punjabi dish. It is made using roasted and mashed eggplant with spices and hence the name baingan (eggplant) bharta (means mash).

Traditionally the eggplant is roasted over charcoal or direct fire to give it a smoky flavor. But you can also grill the eggplant in an oven or air fryer. You can eat it with Indian flatbreads like roti and chapati, also can be served with rice.


Preparing the eggplant for roasting:

Wash and pat dry the eggplant.

Make 3 deep slits in the eggplant using a knife. Insert the garlic cloves into each slit. It will help to cook the eggplant from inside out.

Apply a thin coat of oil on the eggplant. So that you can peel the skin off easily after roasting it.

Now you can roast your eggplant either on direct gas/grill, in the oven or air fryer.

To roast eggplant in the Oven:

Pre-heat the oven to 250°C.

Line the baking tray with aluminum foil and place the prepared eggplant on it.

Once the oven is heated, place the baking tray in the oven and let it cook. Turn the eggplant every 20 minutes for even cooking for a total of about 45 minutes.

Remove the tray out of the oven and allow time to cool.

To roast eggplant in grill or gas:

Place the prepared eggplant on direct heat and cook for about 10-15 mins or until completed roasted. Keep rotating the eggplant regular intervals to ensure it roasts evenly.

Transfer roasted eggplant to a plate and allow to cool.

Mash the eggplant:

Once the eggplant is cooled, peel the skin off.

Remove the head of eggplant and check if it is cooked completely from inside.

Mash the eggplant together with the closed with the help of a fork or chop it using a knife and keep it aside.

Making Baingan Bharta:

In a cooking pan, add some oil and add the Cumin seeds.

Once the cumin seeds splutter, add the finely chopped onions and saute till they turn light golden brown.

Add the finely chopped ginger and saute for a few seconds.

Now add the finely chopped tomatoes and mix until it is combined.

When the tomatoes turn soft add the turmeric powder, chilli powder, coriander powder, garam masala and salt.

Cook till this mixture starts leaving oil from the sides.

Now add the mashed or chopped eggplant (with garlic) and mix well until combined. Cook for couple of minutes.

Finish off with some cilantro (coriander) leaves.
