INGREDIENTS

Whole urad dal (without skin) – 1 cup (~210g)

1 big onion (finely chopped)

2 tbsp black pepper

1 tee spoon (tsp) salt (~6 g) or according to taste

Coriander leaves

Die Fritters werden in Indien auf der Straße zu Tee gereicht oder sind ein feiner kleiner Ganztags- oder Abendsnack.

Indian LENTIL FRITTER MADE WITH LOVE BY ROJA

Medhu Vadai or vada is a popular South Indian deep fried snack or breakfast dish prepared with lentils. It is usually served with coconut chutney and sambar.

HOW TO MAKE

Preparing the batter:

  • Soak the Urad Dal for 2-3 hours in water.
  • In food processor or blender, grind the urad dal with less water. E.g. adding nearly half a cup of water to the 1 cup of soaked urad dal.
  • Never grind the batter for long time at once, grind few seconds – stop, grind again. Open the lid and add water little by little when needed.
  • Never add salt to the batter while grinding, it will make the batter watery and hard to shape the vadais.

Making Vadai:

  • Chop onions, coriander leaves and green peppers (optional). Add all these and the black pepper to the batter along with salt.
  • Now mix everything well and keep it aside.
  • Heat enough oil in a pan (be generous or else vadais may stick to the bottom and get burnt).
  • Now wet your right hand well and make a small ball.
  • And use your thumb to make hole in the middle.
  • And drop it in oil (just invert the vadais over the oil and slightly shake your fingers)
  • Fry them in medium flame, turn the vadais and fry till both the sides turn crisp and golden brown.
